Buttermilk Coconut Pie

Makes 10 servings
Prep Time: 15 min.
Baking Time: 60 to 70 min.


Ingredients:
1-1/4 cups sugar
2 Tablespoons all-purpose flour
1/2 cup butter or margarine, melted
3 eggs, lightly beaten
1/2 cup low-fat buttermilk
1 teaspoon vanilla
1 cup coconut
9-inch unbaked pie crust

Pie Recipe Directions:
Preheat oven to 325-degrees F.
1) In a medium bowl, combine sugar and flour.
2) Add butter, eggs, buttermilk, vanilla, and coconut. Mix well.
3) Pour into unbaked pie shell.
4) Place in oven and bake for 60 to 70 minutes or until set.
