Cucumber and Onion Salad

Makes 6 servings
Prep Time: 10 min.
Cooking Time: 5 min.
Chilling Time: 3 hrs or overnight


Ingredients:
1/2 cup cider vinegar
1/3 cup sugar
1/4 cup water
1 Tablespoon light olive oil
1/2 teaspoon salt
1/4 teaspoon white pepper
4 medium cucumbers, thinly sliced
1 medium onion, thinly sliced

Salad Recipe Directions:
1) In a small saucepan, combine vinegar, sugar, water, oil, salt, and white pepper. Heat until sugar dissolves. Cool.
2) Pour into a large resealable plastic bag.
3) Add cucumbers and onions. Mix gently.
4) Refrigerate several hours or overnight.
5) Remove cucumber and onions from marinade before serving.
